A quick and easy egg mayonnaise tops a fresh Brennans Plain Bagel for a fuss-free lunch or snack. Toast the bagel first, if liked.
1 Brennan's Plain Bagel, sliced
2 hardboiled eggs
3 tablespoons mayonnaise
1 teaspoon mustard
salt and pepper to taste
Separate the whites and the yolks. Place the yolks, mayo, mustard and seasoning in a mixing bowl. Whisk well till a paste forms.
Slice the egg whites into small pieces, then combine with the yolk mixture.
Spread the egg salad onto to the bagel halves and serve.
